Ingredients

Oatmeal Pizza Base
  • 1 cup oatmeal 100 grams
  • 1 small onion, finely chopped
  • 2 large eggs
  • 2 tablespoons yogurt 30 grams
  • 1 teaspoon salt
  • to taste Thyme
  • 100 ml water Split into 50 ml initially and 50 ml additional
  • Oil for frying
  • Mozzarella cheese (optional)

Method

Preparation
  1. Start by placing the oatmeal in a bowl. Add 50 ml of water and mix well to combine. Let it sit for a few minutes, allowing the oatmeal to absorb the water.
  2. In a separate bowl, beat the eggs. Once beaten, add them to the soaked oatmeal and mix everything together until it’s well blended.
  3. Add the finely chopped onion, yogurt, salt, and thyme to the oatmeal mixture. Stir until all the ingredients are nicely combined.
Cooking
  1. Heat a non-stick pan over medium heat. Add a little oil to the pan.
  2. Pour a ladleful of the oatmeal mixture into the pan to form a pizza crust. Cook until it is golden brown on one side, then flip it and cook the other side until it’s also golden.
  3. Repeat this process with the remaining mixture, adding more oil as needed for frying.
  4. If you’d like, sprinkle mozzarella on top of the oatmeal pizza and cover the pan with a lid for a minute or two to help the cheese melt.
  5. Finally, slice your oatmeal pizza like a regular pizza and serve hot.

Notes

You can garnish with fresh herbs or a drizzle of sauce. It pairs with a side salad and can serve with yogurt or a dipping sauce. Add veggies like bell peppers for nutrition and flavor, or spices for heat.
