Ingredients

Main Ingredients
  • 5 pcs Chicken thighs (approximately 1 lb or 450 g)
  • Salt to taste
  • Korean carrots to taste
  • 100 g Semi-hard cheese (about 3.5 oz)
  • 100 g Mozzarella cheese (about 3.5 oz)
  • 1 pc Raw egg
  • 150 g Mayonnaise (approximately 5.3 oz)
  • 1 tbsp Starch (about 8 g)
  • A little Water for baking

Method

Preparation
  1. Cut each chicken thigh lengthwise, carefully removing the bone and skin. If any pieces are too thick, make a few shallow cuts to ensure even cooking.
  2. Cover the chicken pieces with cling film and lightly beat them with a kitchen hammer to flatten them slightly.
  3. Transfer the flattened chicken onto a baking sheet and sprinkle with a little salt for seasoning.
  4. Spread a thin layer of Korean carrots over each piece of chicken, ensuring good coverage for added flavor.
  5. Grate both the semi-hard cheese and mozzarella on the finest grater. In a mixing bowl, combine the grated cheeses with the raw egg, mayonnaise, and starch. Mix all the ingredients thoroughly until you have a homogeneous, tender mass.
  6. Spoon and spread the cheese mixture over the carrots on each piece of chicken. Ensure the cheese covers the chicken completely to the edges.
  7. Pour a few spoons of water into the bottom of the baking sheet. This helps keep the chicken moist during baking and adds a bit of steam.
Cooking
  1. Place the baking sheet in an oven preheated to 180°C (350°F) and bake for 30 to 40 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
