Ingredients

Main Ingredients
  • 1 lb ground beef
  • 1/2 onion diced about 75 g
  • 3 cloves garlic minced
  • 1/2 cup green bell pepper diced, about 75 g
  • 1/2 cup red bell pepper diced, about 75 g
  • 14.5 oz diced tomatoes about 410 g
  • 3/4 cup white rice about 125 g
  • 2 cups beef broth about 480 ml
  • 2 tbsp tomato paste about 30 g
  • 1 tsp Italian seasoning about 1 g
  • 1/2 tsp salt about 3 g
  • 1/4 tsp black pepper about 1 g
  • 1 1/2 cups cheese shredded, about 170 g
  • 1 tbsp parsley chopped

Method

Preparation
  1. Gather all the ingredients to have everything ready for cooking.
  2. In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is fully browned and crumbled, about 5-7 minutes. Drain any excess fat.
  3. Into the skillet with the browned meat, add the diced green and red bell peppers. Stir well.
Cooking
  1. Add the diced tomatoes, white rice, beef broth, tomato paste, Italian seasoning, salt, and black pepper to the skillet.
  2. Bring the mixture to a boil, then reduce heat to a simmer. Cover the skillet and let it cook for about 18 minutes, or until the rice is fluffy and cooked through.
  3. Remove the cover and fluff the rice with a fork. Sprinkle the shredded cheese on top, cover the skillet again, and allow the cheese to melt over low heat for about 2-3 minutes.
  4. Once the cheese is melted, remove from heat, garnish with chopped parsley, and enjoy!

Notes

Serve hot, garnished with a sprinkle of chopped parsley. This dish pairs wonderfully with a side salad or crusty bread. Customize with additional cheese, sour cream, or avocado slices.
