Ingredients

Main Ingredients
  • 1 lb ground beef (lean or regular) For browning
  • 4-5 medium russet or Yukon Gold potatoes, thinly sliced About 1/8 inch thick
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese, divided Use sharp or mild
  • 1 can cream of mushroom soup 10.5 oz / 300 g
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or chopped chives, for garnish

Method

Preparation
  1. In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and no pink remains, about 5-7 minutes. Drain any excess fat.
  2. Wash and thinly slice the potatoes evenly, ensuring they are about 1/8 inch thick.
Layering ingredients
  1. In the crockpot, layer half of the sliced potatoes at the bottom. Follow this with half of the cooked beef and onion mixture, and then a portion of the shredded cheddar cheese.
  2. Repeat these layers with the remaining potatoes, beef mixture, and some additional cheese.
Mix the sauce
  1. In a bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth. Pour this evenly over the layered ingredients in the crockpot.
Cooking
  1. Cover the crockpot and cook on low for 6 to 8 hours, or until the potatoes are tender and the cheese has melted.
  2. About 15 minutes before serving, sprinkle the remaining shredded cheddar cheese on top and cover again.
Serving
  1. Garnish the casserole with fresh parsley or chopped chives before serving.

Notes

Feel free to add in other vegetables like carrots or green beans. For a twist, add diced jalapeños or cayenne pepper to the beef mixture. You can prep this casserole the night before or freeze it before cooking.
