For the Cake Base
  • 2 cups all-purpose flour (250g)
  • 1 cup granulated sugar (200g)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (113g)
  • 1/2 cup brown sugar, packed (100g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (240ml)
  • 2 cups peeled and chopped apples (about 2 medium apples)
  • 1 teaspoon ground cinnamon
For the Crumb Topping
  • 1/2 cup rolled oats (45g)
  • 1/2 cup chopped nuts (optional) (75g)

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and brown sugar until the mixture is light and fluffy. Then, add the eggs and vanilla, mixing until well combined.
  4. Gradually combine the dry ingredients with the wet mixture, alternating with buttermilk. Be careful not to over-mix.
  5. Gently fold in the chopped apples and ground cinnamon until evenly distributed.
  6. Pour the batter into the prepared pan and spread it evenly.
Crumb Topping
  1. For the crumb topping, combine the rolled oats, nuts (if using), and a sprinkle of sugar; crumble this mixture over the cake batter.
Baking
  1. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve once cooled.
