Preparation
- In a mixing bowl, combine the cooked chicken, 3 tablespoons of olive oil, minced garlic, and 1 egg. Beat until well combined and smooth.
- Assess the batter's consistency. If it seems too thick, add another egg to achieve a slightly looser texture.
- Let the mixture rest for about 5 minutes. Then add the baking powder and mix well until evenly incorporated.
Cooking
- Preheat your oven to 400°F (200°C). Grease a baking dish with butter and pour the chicken mixture into it, spreading it evenly.
- Bake for about 15-20 minutes, or until set and lightly golden on top.
- While the chicken base is baking, heat the remaining tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the cream cheese until it melts and blends into a smooth sauce.
- Once the chicken base is out of the oven, spread the creamy garlic sauce over the top.
- Generously sprinkle with grated mozzarella, a pinch of oregano, and grated Parmesan.
- Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving. Enjoy it warm as a complete meal or alongside a fresh salad.
Notes
For extra flavor, add red pepper flakes to the garlic sauce for heat. Experiment with different cheeses for variety. Serve with steamed veggies or a light salad.
