Ingredients

Main Ingredients
  • 1 large egg
  • 1 cup shredded cheese (mixture of mozzarella and provolone or your preferred cheese)
  • 1 cup low-carb flour (almond flour, coconut flour, flaxseed meal, etc.)
  • 2 handfuls chopped herbs (e.g., chives, parsley, basil)

Method

Preparation
  1. In a mixing bowl, beat the egg until well combined.
  2. Add the shredded cheese and your choice of low-carb flour to the bowl. Mix with a spatula or spoon until the egg is fully absorbed.
  3. Fold in the chopped herbs, ensuring they are evenly distributed throughout the mixture.
  4. Transfer the mixture onto a flat surface, cover with plastic wrap, and knead gently until combined. The dough should be smooth and pliable.
  5. Roll out the dough into a square or your desired shape, about 1/4 inch thick. Cut into small squares or shapes, as preferred.
Cooking
  1. Heat a non-stick skillet over low heat. Cook the squares for about 3-4 minutes on each side, or until they are golden brown and cooked through.
  2. Serve warm or cold. These are fantastic on their own or with a dip!

Notes

Experiment with different cheeses for varied flavors; sharp cheddar or creamy goat cheese can be great substitutions. Use fresh herbs for the best flavor, but dried herbs can work in a pinch—just reduce the quantity. Ensure your skillet is well-preheated but not too hot to avoid burning the outside before the inside cooks through. If the dough feels too sticky, add a little more flour to get the right consistency.
