Ingredients

Dough Ingredients
  • 250 g all-purpose flour approximately 2 cups
  • 125 g unsalted, softened butter approximately ½ cup plus 1 tablespoon
  • 100 g powdered sugar approximately ¾ cup
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 pinch salt
Filling Ingredients
  • Jam of your choice (such as raspberry or apricot)
  • Plant-based gelling agent (for example, agar-agar)

Method

Preparation
  1. In a large bowl, beat the softened butter and powdered sugar until creamy.
  2. Add the room temperature egg and vanilla extract to the creamed mixture, and mix well until combined.
  3. Gradually add the sifted flour along with a pinch of salt, mixing until a smooth dough forms.
  4. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Baking
  1. Preheat the oven to 180°C (350°F).
  2. On a lightly floured work surface, roll out the chilled dough to about 5 mm thick.
  3. Use various cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  4. Bake the cookies for about 10 to 12 minutes, or until they begin to lightly brown.
  5. Allow the cookies to cool completely on a wire rack.
Assembly
  1. Once cooled, carefully flip the cookies over and add a teaspoon of jam in the center of each.
  2. Top each jam-filled cookie with a second cookie and gently press to seal the jam inside.
  3. Arrange the filled Viennese pastries on a beautiful plate and sprinkle with powdered sugar.
  4. Serve immediately!

Notes

Chill the dough to make it easier to roll out and handle. Feel free to experiment with different jams or custards as fillings. Dust your pastries with powdered sugar just before serving for an elegant touch.
