Ingredients

Vegetable Base
  • 2 medium onions, diced
  • 2 tablespoons olive oil
  • 1 large carrot, sliced (150 g / 5 oz)
  • 3 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, cubed (300 g / 10 oz)
  • ½ teaspoon turmeric powder
  • 6 cups water or 1.5 liters
  • 200 g cauliflower florets
  • 150 g broccoli florets
  • 100 g Parmesan cheese, grated
  • 2 eggs optional, for serving
  • Fresh parsley, chopped for garnish
  • Salt and black pepper to taste
  • 1 teaspoon Italian herbs

Method

Cooking Instructions
  1. Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté until they become translucent, about 3 minutes.
  2. Incorporate the carrot, celery, and minced garlic. Sauté for another 5-7 minutes until the vegetables soften.
  3. Stir in the cubed potatoes along with the turmeric. Cook for 2 minutes to let the spice release its flavor.
  4. Pour in the water and bring everything to a boil. Once boiling, reduce the heat, and let it simmer, covered, for 10 minutes.
  5. After 10 minutes, add the cauliflower florets and continue to cook covered for another 5 minutes.
  6. Toss in the broccoli florets and simmer for another 5 minutes until they are tender but still bright green.
  7. Stir in the grated Parmesan cheese until melted and combined. Season with salt, pepper, and Italian herbs to taste.
  8. If desired, boil the eggs separately for about 8 minutes, then peel and slice them for serving.
  9. Garnish your soup with fresh parsley and serve hot, adding boiled egg slices on top if using.

Notes

This soup can be made ahead and stored in the fridge for 3-4 days. Reheat before serving. For added flavor, consider adding cayenne pepper or using fresh herbs like thyme or dill. Feel free to use any leftover vegetables.
