Ingredients

For the Base
  • 1 cup sugar 200g
  • 1 cup water 240ml
  • 1 cup cornstarch 130g
  • 1/2 cup pomegranate juice 120ml
  • 1/4 cup lemon juice 60ml
  • 1/2 cup chopped nuts (like pistachios or walnuts) 75g
  • to taste powdered sugar for dusting

Method

Preparation
  1. In a medium-sized pot, combine the sugar and water over medium heat. Stir the mixture until the sugar completely dissolves.
  2. In a separate bowl, mix the cornstarch with the pomegranate juice to create a smooth paste. Make sure there are no lumps for a silky texture!
  3. Gradually pour the cornstarch mixture into the pot with the sugar syrup, stirring continuously until the mixture thickens to a gooey consistency.
  4. Once thickened, add the lemon juice and chopped nuts to the pot. Mix well to evenly distribute the nuts.
  5. Pour the mixture into a greased dish or pan, spreading it evenly, and let it set in a cool place for several hours or preferably overnight.
  6. After it has set, cut the Turkish delight into squares and dust each piece with powdered sugar before serving.

Notes

Store leftover Turkish delight in an airtight container to maintain its chewy texture. Experiment with different fruit juices for unique flavors. Almonds or dried fruits can be used as substitutes for nuts.
