Ingredients

Dry Ingredients
  • 200 g almond flour about 2 cups
  • 100 g oat flour about 1 cup
  • 1 packet baking powder about 10 g
  • 1 pinch salt
Wet Ingredients
  • 150 g ripe banana puree about 1/2 cup
  • 50 g melted coconut oil about 1/4 cup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon grated lemon zest optional

Method

Preparation
  1. Preheat your oven to 180°C (350°F) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the almond flour, oat flour, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk the eggs until fluffy. Add in the banana puree, melted coconut oil, and vanilla extract. Mix until the mixture is smooth.
  4. Gradually combine the wet and dry ingredients, stirring until you have a smooth batter.
  5. If you’re using it, gently fold in the grated lemon zest for extra flavor.
Baking
  1. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  2. Bake for 25–30 minutes. Check for doneness with a toothpick; it should come out clean when the treat is ready.
  3. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  4. Cut into squares and serve!

Notes

Enjoy warm or at room temperature. Pair with yogurt or nut butter for breakfast. Try sprinkling cocoa or homemade nut sauce before serving. Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for a longer shelf life. Feel free to add nuts, seeds, or dried fruits for added texture and flavor.
