Ingredients

Main Ingredients
  • 4 large potatoes Russet, red, or Yukon gold potatoes can be used.
  • 1 cup cooked meat (ground beef or chicken) Substitute with beans or lentils for a vegetarian option.
  • 1 cup cheese (mozzarella or cheddar) Try pepper jack for a spicy twist or feta for a Mediterranean flavor.
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Fresh herbs (optional) For garnish.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Wash the potatoes thoroughly and bake them in the oven for about 45 minutes, or until they are tender when pierced with a fork.
  3. While the potatoes are baking, heat olive oil in a pan over medium heat. Add the chopped onions and bell peppers, sautéing them until they soften, about 5-7 minutes.
  4. Add the cooked meat to the pan along with salt and pepper to taste. Mix everything well to combine the flavors.
  5. Once the baked potatoes are cool enough to handle, cut each one in half lengthwise. Carefully scoop out the insides, leaving a small border of potato inside the skin to hold its shape.
Assembly
  1. In a mixing bowl, combine the scooped-out potato, the meat mixture, and the cheese. Stir until everything is thoroughly mixed.
  2. Refill the potato skins with the hearty meat and cheese mixture. For extra cheesiness, top with additional cheese if desired.
Baking
  1. Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  2. If you like, garnish with fresh herbs before serving.
  3. Enjoy your stuffed potatoes hot!

Notes
