Ingredients

Main Ingredients
  • 2 medium eggplants
  • 1 cup cooked rice (about 180g)
  • 1 cup ground meat (beef, pork, or turkey) (approximately 225g)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (about 240g)
Seasonings
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Optional Toppings
  • 1/2 cup grated cheese (optional, about 50g)
  • Olive oil for sautéing and drizzling

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2 inch shell. Be careful not to break the skin.
  3. Chop the scooped-out eggplant flesh into small pieces and set aside.
Cooking
  1. In a skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  2. Add the ground meat to the skillet and cook it until browned, breaking it up as it cooks.
  3. Stir in the chopped eggplant flesh and diced tomatoes, letting it cook for about 5 minutes.
  4. Add the cooked rice, oregano, salt, and pepper. Mix everything well to create a delicious filling.
  5. Fill each eggplant half with the meat and rice mixture, pressing down gently to pack it in.
  6. If desired, sprinkle some grated cheese on top of the stuffed eggplants.
  7. Place the stuffed eggplants in a baking dish and bake for 30-35 minutes, or until the eggplants are tender and cooked through.
  8. Serve warm and enjoy!

Notes

Make it vegetarian by replacing the meat with chopped mushrooms or lentils. For some heat, add red pepper flakes or diced jalapeños. Leftover filling can be baked alongside the stuffed eggplants for a side dish. Refrigerate prepared eggplants covered with foil until ready to bake. Other veggies like zucchini or bell peppers can be used as an alternative.
