Ingredients

For the Potatoes
  • 4 large large potatoes, peeled and thinly sliced (about 2 pounds or 900 g) Using starchy potatoes like russets is ideal for this recipe.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese Can substitute with any cheese you prefer.
  • 2 tablespoons butter, cut into small pieces Can substitute with vegan butter for a dairy-free version.
  • to taste Fresh parsley for garnish

Method

Preparation
  1. In a large bowl, combine the sliced potatoes with olive oil, salt, and black pepper. Toss well to coat all slices evenly.
Cooking
  1. Heat a large frying pan over medium heat. Add the potato mixture and spread it out evenly. Avoid overcrowding the pan to ensure they crisp up nicely.
  2. Cook the potatoes for about 10-12 minutes, flipping occasionally until golden brown and crispy.
  3. Sprinkle the shredded cheddar cheese over the potatoes and add small portions of butter on top.
  4. Cover the pan with a lid and allow the cheese to melt for about 2-3 minutes. Keep an eye on it to avoid burning the cheese.
  5. Once the cheese is melted, remove from heat and garnish with fresh parsley before serving.

Notes

For even crispier potatoes, consider soaking the sliced potatoes in cold water for about 30 minutes prior to cooking.
