Preparation
- Start by rinsing the chicken breasts under cold water. Pat them dry with paper towels and season both sides with salt and pepper.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and stir for about a minute until fragrant. Make sure not to let it burn!
- Place the seasoned chicken in the skillet and cook for about 5-6 minutes on each side, until it’s golden brown and fully cooked. Remove the chicken from the pan and set it aside.
- In the same skillet, add the vegetable broth, lemon juice, and fresh rosemary. Bring it to a simmer, scraping up any flavorful bits from the bottom of the pan.
- Toss in the fresh spinach and cherry tomatoes. Cook for 3-4 minutes until the spinach wilts and the tomatoes soften slightly.
- Slice the cooked chicken and add it back to the skillet. Stir to coat in the delicious broth and veggies.
- Sprinkle the crumbled feta cheese over the chicken and veggies for a finishing touch. Let it warm through for an extra minute.
- Plate it, and enjoy the burst of flavors!
Notes
This dish can be served in layers on a plate, with the sautéed veggies under the sliced chicken and topped generously with feta cheese. Pair it with rice, quinoa, or a fresh salad. A drizzle of balsamic glaze adds an elegant touch.
