For the Potato Roll
  • 3 large large eggs
  • 800 grams raw potatoes, peeled and grated About 5-6 medium potatoes
  • 2 tablespoons fresh parsley, chopped Or chives or coriander
  • 1 cup canned corn, drained About 170 g
  • 1 medium onion, diced
  • 1 medium tomato, seeded and diced
  • 1 cup unbleached all-purpose flour Or rice flour or oat flour, about 120 g
  • 1 tablespoon vegetable broth powder Or use salt or onion powder
  • 1 tablespoon smoked paprika Or sweet or spicy paprika
  • Cooking oil for greasing the pan
For the Filling
  • 300 grams cooked and shredded chicken Seasoned
  • 200 grams cream cheese, softened
  • 150 grams mozzarella cheese, grated
  • 150 grams bacon, diced
  • 100 grams grated mozzarella cheese For topping

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Crack the eggs into a large bowl and whisk until combined.
  3. Grate the peeled potatoes using the coarse side of a grater and add them to the bowl with the eggs.
  4. Stir in the parsley, drained corn, diced onion, diced tomato, flour, vegetable broth powder, and smoked paprika until everything is well mixed.
Baking
  1. Generously grease two baking pans with cooking oil and evenly divide the potato mixture between them.
  2. Bake for approximately 35 minutes or until the edges are golden brown and the center is set.
Filling
  1. While the rolls are baking, prepare the filling by mixing the seasoned chicken with cream cheese and grated mozzarella in a bowl.
  2. In a frying pan, cook the diced bacon until it’s crispy, then drain on paper towels.
  3. Once the rolls are baked, remove them from the oven and carefully fill each one with the chicken and cheese mixture. Use baking paper to help roll them up tightly.
  4. Place the filled rolls back in the pans, top with the remaining grated mozzarella cheese, and return them to the oven for an additional 10 minutes, or until the cheese is melted and starting to brown.
  5. Serve hot and enjoy the comforting flavors of your homemade savory potato roll!

Notes

Grate the potatoes just before using them to prevent browning. If your mixture feels too dry, a splash of milk or water can help bind it together. Allow the filled rolls to rest for a few minutes before slicing to keep everything from spilling out.
