Ingredients

Main Ingredients
  • 1 kg 1 kg chicken, cut into pieces
  • 2 tablespoons 2 tablespoons oil
  • 2 medium 2 medium onions, finely chopped
  • 2 medium 2 tomatoes, chopped
  • 4-5 cloves 4-5 cloves of garlic, minced
  • 1 inch 1 inch ginger, minced
  • 2-3 2-3 green chilies, slit
  • 1 tablespoon 1 tablespoon Saoji masala (or garam masala if unavailable)
  • 1 teaspoon 1 teaspoon turmeric powder
  • 1 tablespoon 1 tablespoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Method

Preparation
  1. Heat the oil in a pan over medium heat. Once hot, add the finely chopped onions and sauté until they turn golden brown.
  2. Add the minced garlic, ginger, and slit green chilies. Cook for a few minutes until aromatic.
  3. Stir in the chopped tomatoes and allow them to soften, which usually takes about 5-7 minutes.
  4. Add the Saoji masala, turmeric powder, red chili powder, and salt. Sauté for a couple of minutes to let the spices bloom.
  5. Add the chicken pieces to the pan and mix well to ensure the chicken is fully coated with the spice mix.
  6. Reduce the heat to medium, and cook the chicken, stirring occasionally, until fully cooked through, about 20-25 minutes.
  7. Garnish with fresh coriander leaves and serve hot alongside rice or chapatis.

Notes

To enhance flavor, marinate the chicken with spices for a few hours or overnight. For a milder dish, adjust the green chilies and red chili powder.
