Ingredients

Main Ingredients
  • 200 g almonds (about 1 ¾ cups)
  • 100 g sugar (½ cup)
  • 2 tablespoons water
  • 200 g white chocolate (about 7 oz)
  • 100 g almond butter (about ½ cup)
  • 1 pinch salt

Method

Preparation
  1. Preheat a skillet over medium heat and add the almonds. Toast them without any oil, stirring regularly until they are golden brown and fragrant.
  2. Add sugar and water to the skillet. Cook over medium heat, stirring constantly until the sugar dissolves and begins to caramelize.
  3. Continue stirring as the caramel thickens and coats the almonds evenly. Pour the coated nuts onto a baking sheet lined with parchment paper and let them cool and harden.
  4. Melt the white chocolate using a double boiler method. Once melted, stir in the almond butter and a pinch of salt to create a smooth mixture.
  5. Once the almonds are cool and set, dip them into the chocolate-almond mixture, ensuring they are well-coated. Place the coated almonds back onto the parchment paper and allow them to set until firm.
Serving
  1. Plate the Roasted Almond Pralines beautifully on a decorative dish or in small treat bags for gifting. These pralines pair wonderfully with a warm cup of coffee or hot chocolate.

Notes

Store pralines in an airtight container at room temperature for up to a week. Add a touch of vanilla or almond extract for extra flavor. Try using different nuts like cashews or pecans for a unique twist.
