Ingredients

For the Meat Layer
  • 250 g ground beef About 0.5 lb
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika
  • 1 tablespoon ketchup
  • 2 tablespoons olive oil
For the Potato Layer
  • 500 g potatoes, peeled and sliced About 1.1 lb
For the Egg Topping
  • 4 large eggs
  • 1 bunch spring onions, chopped
  • 50 g cheese, shredded Cheddar or your choice, about 1.75 oz

Method

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 4-5 minutes, or until the onions are translucent and fragrant.
  2. Add the ground beef to the pan. Cook for 5-7 minutes, breaking it up with a spatula, until it’s browned. Season with salt, pepper, paprika, and stir in the ketchup. Cook for another 2-3 minutes.
  3. Arrange the sliced potatoes evenly over the meat mixture in the skillet.
  4. In a bowl, whisk the eggs with a pinch of salt and pepper. Pour this mixture over the layered potatoes.
Cooking
  1. Cover the skillet and reduce the heat to low. Cook for about 20 minutes, or until the potatoes are tender and the eggs are set.
  2. Sprinkle the shredded cheese on top of the casserole and cook uncovered for an additional 1-2 minutes, just until the cheese has melted.
  3. Remove from heat and sprinkle with chopped spring onions before serving.
