Ingredients

For the Dough
  • 2 large large eggs
  • 200 grams potatoes, peeled and diced
  • 200 milliliters milk, at room temperature
  • 25 grams Parmesan cheese, grated or 1 teaspoon salt
  • 30 milliliters oil or 30 grams margarine or butter
  • 200 grams cream
  • 250 grams all-purpose flour
  • 1 tablespoon baking powder
For the Filling
  • 200 grams cooked ham, chopped
  • 200 grams mozzarella cheese, shredded
  • 2 medium tomatoes, chopped
  • 2 tablespoons tomato paste or prepared tomato sauce
  • 150 grams mozzarella cheese, for topping
For Garnish
  • Fresh parsley, chives, oregano, or your favorite herbs

Method

Preparation
  1. Place the diced potatoes in a large pot of boiling water. Cook until soft, about 10-15 minutes. Drain and mash until smooth.
  2. In a blender, combine the chopped onion and milk. Blend until smooth to create a broth.
  3. In a mixing bowl, combine the mashed potatoes and the onion broth, mixing until well combined.
  4. Add the eggs, Parmesan cheese (or salt), oil, cream, flour, and baking powder to the bowl. Stir until a dough forms; it should be moist but not too sticky.
Assembly
  1. Preheat your oven to 180°C (350°F). Spread half of the dough into a greased baking pan.
  2. Top with ham, half of the mozzarella cheese, chopped tomatoes, and tomato paste.
  3. Spread the other half of the dough over the filling. Sprinkle the remaining mozzarella cheese on top.
  4. Garnish with fresh parsley, chives, or oregano.
Baking
  1. Place in the oven and bake for about 30 minutes, or until golden brown and cooked through.
  2. Once done, let it cool slightly before slicing into squares. Serve hot and enjoy!

Notes

For an extra crunch, consider broiling the top for the last 2-3 minutes of baking. Letting the potato mixture sit for a few minutes before adding the flour can enhance the flavors. If you notice the dough is too wet, add a little more flour until the desired consistency is achieved.
