Ingredients

Main ingredients
  • 4-5 large large pomegranates (to yield 500ml / 2 cups fresh juice)
  • 170 g granulated sugar
  • 50 g cornstarch
  • 15-25 g hazelnuts, chopped (optional) Optional ingredient for added texture
  • 100 g desiccated coconut powder

Method

Preparation
  1. Cut the pomegranates in half and extract the arils. Collect approximately 3 cups of pomegranate arils.
  2. Blend the arils in a blender or mash to release juice, then strain to get about 500ml (2 cups) of fresh pomegranate juice.
  3. In a saucepan, combine the juice, sugar, and cornstarch, whisking until dissolved.
  4. Heat the mixture over medium heat, stirring constantly.
  5. Continue cooking and stirring for 10-15 minutes until thick and glossy.
  6. If using, chop hazelnuts and add to the mixture in the last 2 minutes of cooking.
  7. Prepare a small dish by greasing it or lining it with parchment and spreading half of the coconut on the bottom.
  8. Pour the mixture into the prepared dish and smooth the top. Let it cool for 1-2 hours.
  9. Cover and refrigerate for 24 hours to set.
  10. Once set, cut into squares and roll in the remaining coconut to coat.

Notes

Pomegranate Turkish Delight is best served at room temperature. Present it on a decorative platter, dusted with extra desiccated coconut for an elegant touch. Pair it with a cup of tea or coffee. For a festive touch, consider garnishing with fresh pomegranate seeds or edible flowers. Store in an airtight container at room temperature for up to 2 weeks, or refrigerate for longer freshness. This recipe is already vegan.
