  • 2 kg 2 kg frische Knoblauchknollen (2 kg fresh garlic bulbs) Choose fresh, firm garlic bulbs without soft spots or mold
  • 300 ml 300 ml Apfelessig oder Traubeneis (300 ml apple cider vinegar or grape must)
  • 1.5 tablespoons 1.5 Esslöffel grobes Steinsalz (1.5 tablespoons coarse sea salt) Use coarse sea salt for the brine
  • 1 teaspoon 1 Teelöffel Zitronensäure (1 teaspoon citric acid)
  • 4 slices 4 dünne Zitronenscheiben (4 thin lemon slices)
  • 2 leaves 2 Lorbeerblätter (2 bay leaves)
  • 1-1.5 liters 1-1.5 Liter warm gefiltertes oder gekochtes Trinkwasser (1-1.5 liters warm filtered or boiled drinking water) Use warm filtered or boiled water
  • 2 jars 2 saubere 1-Liter-Glasgefäße mit dicht schließendem Deckel (2 clean 1-liter glass jars with airtight lids) Ensure jars are sterilized

Method

Preparation
  1. Select fresh and firm garlic bulbs, trimming the stem ends and removing the papery outer layer. Rinse the garlic bulbs under cold water.
  2. Sterilize the two 1-liter glass jars by thoroughly cleaning them to avoid contaminants.
  3. Gently place the prepared garlic bulbs into the jars, adding one bay leaf and the lemon slices to each jar.
Brine Preparation
  1. In a bowl, combine the coarse sea salt and citric acid, then add apple cider vinegar and mix until the salt dissolves.
Final Steps
  1. Distribute the brine evenly among the jars and fill the remaining space with warm, cooled water.
  2. Seal the jars tightly and place them in a cool, dark location for 15 days. After 15 days, store the jars in the refrigerator for long-term preservation.

Notes

Pickled garlic can be enjoyed straight from the jar, in salads, sandwiches, pasta, seafood, and meat recipes. It can also be served on charcuterie boards or added to marinades.
