Ingredients

Potato Preparation
  • 4 large large potatoes (about 1 kg) Use medium-starchy potatoes like Russets or Yukon Gold for the best texture.
Filling Ingredients
  • 1 cup cooked and crumbled turkey bacon (about 150 g) Feel free to substitute with other types of bacon or deli meats.
  • 1 cup shredded cheese (cheddar or your choice, about 100 g) You may use different types of cheese to customize the flavor.
  • 1/2 cup sour cream (about 120 g)
  • 1/4 cup green onions, chopped (about 25 g) For garnish, reserve some extra green onions.
  • Salt and pepper to taste
  • Olive oil For brushing the potato skins.
  • Paprika (optional)

Method

Baking Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. Carefully wash the potatoes and place them directly on the oven rack. Bake for about 45-60 minutes or until they are tender when pierced with a fork.
Preparing the Filling
  1. Once the potatoes are done baking, let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a bit of potato inside to hold the shape of the skins.
  2. In a mixing bowl, combine the scooped-out potato flesh, crumbled turkey bacon, shredded cheese, sour cream, chopped green onions, salt, and pepper. Mix until well combined.
Stuffing and Baking
  1. Spoon the filling back into the potato skins, making sure to pack it in nicely.
  2. Brush the outside of the potato skins with olive oil and sprinkle with paprika if using.
  3. Return the stuffed potatoes to a baking sheet and pop them back in the oven for an additional 15-20 minutes, or until they’re heated through and the tops are nice and crispy.
Serving
  1. Serve your warm, oven-fried stuffed potatoes garnished with extra green onions.

Notes

You can prep your stuffed potatoes in advance and store them in the refrigerator. Bake them just before serving. Leftover stuffed potatoes can be stored in an airtight container in the refrigerator for up to three days. They can also be frozen before baking.
