Ingredients

Dry Ingredients
  • 1 cup all-purpose flour 125g
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted 113g
  • 1/2 cup granulated sugar 100g
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice 60ml
Flavoring
  • Zest of 1 orange
  • Zest of 1 lemon

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and grease the madeleine pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another large bowl, whisk the melted butter and sugar together until fully blended.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the zest of the orange, zest of the lemon, vanilla extract, and orange juice.
Baking
  1. Gradually fold the flour mixture into the buttery egg mixture, careful not to over-mix.
  2. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  3. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  4. Allow the madeleines to cool for a few minutes in the pan before gently removing them.

Notes

Serve warm or at room temperature; sprinkle with powdered sugar for presentation. Cooling the butter slightly before mixing can prevent cooking the eggs. Store madeleines tightly wrapped to freeze.
