Ingredients

Dough Ingredients
  • 250 g butter Softened
  • 250 g sugar Granulated
  • 2 pieces eggs Large
  • 1 teaspoon rum Optional
  • 1 pinch lemon zest Freshly grated
  • 1 pinch salt
  • 100 g ground almonds Can substitute with hazelnuts or walnuts
  • 500 g wheat flour
Decoration Ingredients
  • 200 g dark chocolate For decoration

Method

Preparation
  1. In a large bowl, combine the butter, sugar, and eggs. Add in the optional rum, lemon zest, and a pinch of salt. Mix together until the mixture is creamy and well-combined.
  2. Gradually stir in the ground almonds and flour until you have a smooth and cohesive dough.
  3. Shape the dough into a ball, cover it with plastic wrap, and let it rest in the fridge for at least one hour—overnight is even better for the best flavor!
Baking
  1. Preheat your oven to 170°C (340°F) and line your baking sheets with parchment paper.
  2. Prepare your meat grinder and set it to the cookie-making setting.
  3. Divide the chilled dough into pieces the size of tennis balls and feed them directly into the grinder.
  4. Use the grinder to create long strips of dough, shaping the cookies as desired—twists, circles, or any fun shape you can think of!
  5. Bake your cookies in the preheated oven for about 10 minutes, or until they turn golden brown.
Decoration
  1. Once your cookies have cooled, melt the dark chocolate and decorate them as desired. Drizzle, dip, or spread the chocolate—whatever you fancy!
  2. Allow the chocolate to set completely and store your delightful cookies in a cool, dry container.

Notes

Experiment with flavors by switching nuts or adding a hint of cinnamon. Store cookies in an airtight container for freshness.
