Ingredients

Cake Batter
  • 225 g Butter, softened 1 cup
  • 225 g Caster Sugar 1 cup
  • 275 g Self-Raising Flour 2 cups
  • 2 tsp Baking Powder
  • 4 large Eggs
Filling
  • 450 g Cooking Apples (e.g., Bramley), peeled, cored, and chopped 1 lb
Topping
  • 2 tbsp Demerara Sugar for topping

Method

Preparation
  1. Preheat your oven to 160°C (325°F) and lightly grease a 9-inch round cake tin.
Mix the Batter
  1. In a large mixing bowl, combine the softened butter, caster sugar, self-raising flour, baking powder, and eggs. Beat the mixture until smooth and well-combined, which should take about 2-3 minutes.
Prepare the Apples
  1. Peel, core, and chop the cooking apples into small pieces.
Combine
  1. Carefully fold the chopped apples into the cake batter, ensuring they are evenly distributed.
Bake the Cake
  1. Spoon the batter into the prepared cake tin and level the surface with a spatula. Sprinkle the demerara sugar evenly over the top, then bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
  2. Once baked, allow the cake to cool slightly before transferring it to a serving plate.

Notes

To serve, slice the cake into generous wedges. It pairs beautifully with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
