Ingredients

Main Ingredients
  • 100 g rolled oats (3.5 oz)
  • 200 ml milk (¾ cup)
  • 2 large eggs
  • 5 ml vanilla extract (1 tsp)
  • 1 g salt (a pinch)
Fruits and Nuts
  • 200 g ripe bananas (about 2 medium; 7 oz)
  • 150 g apple (1 medium; 5.3 oz)
  • 100 g fresh blueberries (3.5 oz)
  • 30 g chopped walnuts (1 oz)

Method

Preparation
  1. Preheat your oven to 180°C (350°F) and line an 18 cm (7-inch) baking pan with parchment paper.
  2. Mix the rolled oats with the milk in a bowl and let it rest for 10 minutes to soak.
  3. In the meantime, mash the bananas in a separate bowl until smooth and chop the apple into small cubes.
Mixing and Baking
  1. After the oats have soaked, add the eggs, vanilla extract, and salt, mixing well.
  2. Then gently fold in the mashed bananas, apple cubes, blueberries, and chopped walnuts.
  3. Pour the mixture into the prepared baking pan, spreading it out evenly.
  4. Bake in the oven for about 40 minutes, checking for doneness by inserting a toothpick into the center—when it comes out clean, it’s ready.
  5. Once baked, let the cake cool in the pan for 10 minutes before unmolding it onto a wire rack to cool completely.

You can sprinkle extra walnuts or fresh berries on top for added flavor and texture. Leftovers can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week. The cake can also be frozen for up to 2 months.
