  • 1 very ripe banana Using ripe bananas enhances flavor and moisture.
  • 1 large egg Helps to provide structure to the cake.
  • 1/4 cup almonds Lightly toast for added flavor.
  • 1 tablespoon coconut oil Can be substituted with neutral oil or melted butter.
  • 1 tablespoon cocoa powder Optional, can be omitted for a plain banana cake.

  • 1 teaspoon favorite sweetener Adjust sweetness according to preference.
  • 1 teaspoon baking powder Important for the rise of the cake.
  • A handful walnuts and almonds For decoration.

Method

Preparation
  1. In a bowl, combine the rolled oats and milk. Stir well and let it soak for 15 minutes to soften the oats.
  2. Cut the very ripe banana into pieces and add it to the soaked oats.
  3. Using an immersion blender or a regular blender, blend the mixture until smooth, achieving a nice, creamy consistency.
  4. Add the egg and mix thoroughly to give the cake structure.
  5. In a dry skillet over medium heat, lightly toast the almonds for about 3-4 minutes, then chop and fold them into the batter.
Baking
  1. To the blended mixture, add coconut oil, vanilla extract, cocoa powder, sweetener, and baking powder. Mix until well combined.
  2. Pour the batter into a greased baking pan and smooth the top. Decorate with walnut and almond pieces.
  3. Bake in a preheated oven at 360°F (180°C) for about 45 minutes, or until the top is golden brown and a toothpick comes out clean.
  4. Allow the cake to cool completely before slicing. Enjoy it warm or cold with a cup of tea!

Notes

Let the cake cool thoroughly for better slicing. Store leftovers in an airtight container at room temperature for up to 3 days.
