  • 1 apple cored and diced
  • 1/3 cup walnuts, chopped Can substitute with almonds or pecans.

Method

Baking
  1. Preheat your oven to 360°F (180°C).
  2. In a mixing bowl, combine the eggs, rolled oats, baking powder, milk, and citric acid. Stir until well mixed.
  3. Slice the banana and dice the apple, then gently fold them into the oat mixture along with the cinnamon and chopped walnuts.
  4. Pour the mixture into a greased baking dish, spreading it out evenly.
  5. Bake in the preheated oven for about 30 minutes, or until the top is golden brown and the mixture is set.
  6. Allow it to cool slightly before serving. This dish is delightful warm, but can also be enjoyed cold.

Notes

For a more indulgent flavor, add a sprinkle of vanilla extract to the egg mixture. Letting it cool for about 10 minutes enhances the texture. If in a hurry, this bake can be made the night before and stored in the fridge.
