Method
Preparation
- In a medium bowl, mix together the mascarpone cheese, white chocolate chips, shredded coconut, and vanilla extract until well combined.
- Using your hands, form the mixture into small balls, about the size of a walnut. Place the formed balls on a tray lined with parchment paper.
- Once all the balls are shaped, pop the tray into the freezer for about 30 minutes to allow the bites to become firm.
Chocolate Coating
- While the bites are chilling, melt the milk chocolate chips in the microwave or use a double boiler for a gentle melt.
- Once melted, stir in the unsweetened cocoa powder until well mixed together.
- Take each chilled coconut ball and dip it into the chocolate ganache, making sure it is fully coated. Place the dipped bites back onto the parchment-lined tray.
- Put the tray in the refrigerator until the chocolate is set, which should take about 20 minutes.
Serving
- Once the chocolate is firm, your No-Bake Chocolate Coconut Bites are ready to be enjoyed! Serve them chilled.
Notes
Chill rolled bites before dipping in chocolate to maintain shape. Experiment with different coatings for added crunch. Store leftovers in an airtight container in the refrigerator.
