Ingredients

Potatoes and Cheese
  • 5-6 medium medium potatoes, cut into small pieces (about 2 pounds / 900 g)
  • 8-10 slices slices of cheese (American, cheddar, or your favorite) Feel free to mix different kinds for added flavor.
  • 5.3 oz grated cheese for topping
Meat Mixture
  • 1 pound minced meat (beef, turkey, or a mix)
  • 1 medium onion, chopped
  • 1 bell pepper chopped (any color)
  • 2 teaspoons tomato paste
  • 3 tablespoons water
  • 1 teaspoon dried garlic or paprika
  • 1 teaspoon dried oregano
  • Black pepper, to taste
Egg Mixture
  • 3 large eggs
  • ½ cup milk
  • 1 teaspoon dried oregano (for the egg mixture)
Garnish
  • 2-3 green onions, chopped Regular onions can be used as a substitute.
Other
  • 1 tablespoon vegetable oil for frying
  • 1 teaspoon salt, plus more for seasoning

Method

Preparation
  1. Place the cut potatoes into a large pot with water and 1 teaspoon of salt. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.
  2. In a frying pan over medium heat, add vegetable oil. Once hot, add the chopped onion and sauté for about 3 minutes until softened and fragrant.
  3. Add the minced meat to the pan with onions and cook for about 5 minutes, breaking it apart as it cooks. You want it nicely browned.
  4. Stir in the bell pepper, tomato paste, water, salt, dried garlic or paprika, oregano, and black pepper. Cook for another 2-3 minutes to combine flavors.
Assembly
  1. In your baking dish, evenly layer half of the cooked potatoes, followed by the meat mixture, and then half of the cheese slices. Repeat with another layer of potatoes and meat, topping with the remaining cheese slices.
  2. In a bowl, whisk together the eggs, milk, 1 teaspoon salt, and 1 teaspoon oregano until fully combined. Pour this mixture evenly over the layered ingredients.
  3. Sprinkle the grated cheese over the top of the casserole.
Baking
  1. Preheat your oven to 350°F (180°C) and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool slightly. Garnish with chopped green onions before serving.

Notes

Ensure your potatoes are well-drained after boiling to avoid excess moisture in the casserole. Let the dish sit for about 5-10 minutes after baking for easier slicing.
