Ingredients

Cookie Ingredients
  • 200 g Marzipan Paste Chopped into small pieces
  • 100 g Ground Blanched Almonds
  • 70 g Powdered Sugar
  • 1 packet Vanilla Sugar
  • 1 large Egg White Separated from the yolk
  • 50 g Flaked Blanched Almonds For coating
  • a bit Powdered Sugar For dusting before serving

Method

Preparation
  1. Start by separating the egg white from the yolk. Place the egg white in a mixing bowl.
  2. Chop the marzipan into small pieces. Add the chopped marzipan, powdered sugar, and vanilla sugar to the bowl with the egg white.
  3. Using a stand mixer or hand mixer on low speed, mix the ingredients until they form a homogeneous mixture.
  4. Gently fold in the ground blanched almonds into the mixture until well combined.
  5. Take small pieces of the mixture (about 25 g or 0.9 oz each) and roll them into balls. If the dough is sticky, lightly wet your hands to help shape the cookies.
  6. Roll each ball in flaked blanched almonds, pressing them down slightly to ensure they stick.
  7. Place the marzipan cookies on a baking tray lined with parchment paper.
Baking
  1. Preheat your oven to 160°C (320°F) and bake the cookies for 15 to 20 minutes, or until they are lightly golden brown.
  2. Allow the cookies to cool briefly on the tray before transferring them to a wire rack to cool completely.
  3. Sprinkle a little powdered sugar over the cookies before serving for that perfect finishing touch.

Notes

Store any leftovers in an airtight container at room temperature for up to a week. Consider adding a splash of almond extract for extra flavor or mixing in different ground nuts for variation.
