  • 200 g graham crackers about 1 package
  • 2 tablespoons butter melted
Cream Filling
  • 200 ml cream or whipping cream 1 can
  • 200 g cream cheese or labneh cheese 1 package
  • 4-5 tablespoons powdered sugar
  • 1 packet vanilla extract
Topping
  • 2-3 whole ripe mangoes peeled and sliced

Method

Preparation
  1. Grind the graham crackers in a food processor until they become fine crumbs.
  2. Mix the crumbs with the melted butter and press the mixture into a springform pan to form a solid base.
  3. Chill this in the refrigerator for about 15 minutes to set.
Cream Preparation
  1. In a mixing bowl, beat together the cream and cream cheese until smooth and creamy.
  2. Add in the powdered sugar and vanilla extract, and mix again until well combined.
Assembly
  1. Once your base has chilled, spread a generous layer of the cream mixture on top.
  2. Arrange the sliced mangoes over the cream layer.
  3. Continue layering with more cream and mango slices until you reach the top.
Chilling and Serving
  1. Place the assembled cake in the refrigerator and let it chill for at least 2-3 hours, or ideally overnight.
  2. Garnish with extra mango slices or some grated chocolate before serving.

Notes

To enhance the flavor, choose ripe mangoes that give slightly when squeezed. Consider adding a splash of lime juice to the cream for a zesty twist.
