Ingredients

Main Ingredients
  • 2 large potatoes Choose starchy varieties like Russets or Yukon Gold.
  • 100 g mozzarella cheese, shredded Feel free to substitute with other cheeses like cheddar or gouda.
  • Salt To taste.
  • Pepper To taste.
  • Fresh herbs for garnish Optional, consider using parsley or chives.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes thoroughly, then pierce them several times with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, until they feel tender when pierced with a knife.
  4. Carefully remove the potatoes from the oven and cut a slit down the center of each one. Season generously with salt and pepper.
  5. Fill the opening with shredded mozzarella cheese and return the potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Sprinkle with fresh herbs if desired, and serve warm.

Notes

Ensure your potatoes are evenly pricked to prevent any bursting during baking. For a creamier texture, add a dollop of sour cream or Greek yogurt before serving. Experiment with toppings like bacon bits, sautéed onions, or jalapeños for a bit of flair.
