Ingredients

Dry Ingredients
  • 2 cups all-purpose flour (250g)
  • 1.5 cups granulated sugar (300g)
  • 1 tbsp baking powder
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cups unsalted butter, at room temperature (113g)
  • 1 tbsp fresh lemon zest
  • 0.5 cups freshly squeezed lemon juice (120ml)
  • 4 large eggs
  • 1 tsp vanilla extract

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in lemon zest, lemon juice, and vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
Baking
  1. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cakes sit in their pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Notes

For serving, consider dusting with powdered sugar or drizzling with lemon glaze. Pairs well with whipped cream or fresh berries. Use organic lemons for better flavor.
