Preparation
- Combine milk, sugar, and flour, if desired, in a deep pot.
- Cook while stirring with a whisk until the mixture reaches a pudding consistency.
- Once the pudding thickens and begins to boil, add margarine and vanilla, mixing well again.
- Remove the pudding from the heat.
- Using a ladle, fill a medium coffee cup with pudding, leaving a space of two fingers at the top.
- Allow the pudding in the cups to reach room temperature, then chill in the refrigerator for at least 4 hours.
- Carefully remove the chilled puddings from the cups and roll them in grated coconut.
- Arrange the coconut-coated puddings on a serving plate and garnish with your desired fruits.
- Serve and enjoy!
Notes
For serving, you can drizzle some chocolate sauce or add a sprinkle of extra grated coconut on top for added flavor and texture. Consider serving it alongside a scoop of vanilla ice cream for a decadent treat. Pair with fresh mint leaves or a dusting of powdered sugar for an elegant finish.
