  • to taste ground black pepper

  • to taste paprika
  • olive oil olive oil for rubbing
  • 3 cloves garlic, crushed and finely chopped
  • 2 onions onions, cut into half-rings
For the Glaze
  • 1 orange, juiced
  • 2 tbsp brown sugar
  • 50 ml soy sauce about 3.5 tbsp
For the Sides
  • 1-2 eggplants, sliced
  • 200 g cherry tomatoes, chopped
  • 2 cloves garlic, finely chopped
  • 1 bunch cilantro, chopped
  • 1 bunch parsley, chopped
  • olive oil olive oil for frying and dressing
  • to taste salt
  • to taste ground black pepper

Method

Preparation
  1. Make deep slits along the beef loin and rub salt, ground black pepper, ground coriander, paprika, and olive oil all over the meat.
  2. Stuff the crushed garlic into the slits of the beef and insert the onion half-rings. Tie the beef with kitchen twine to hold everything together.
Baking
  1. Spread remaining onion half-rings on a parchment paper. Place the tied beef on top, wrap it in parchment and cover it with foil. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes.
Preparing Sides
  1. Slice the eggplants and sprinkle them with salt. Let them rest for about 10-15 minutes to draw out moisture.
  2. In a small saucepan, cook orange juice, brown sugar, and soy sauce together until thickened for the glaze.
Final Cooking
  1. After initial baking, remove beef from oven and brush glaze generously over the meat. Return to oven for an additional 15 minutes.
Frying Eggplant
  1. Rinse salted eggplant slices to remove excess salt and pat them dry. Heat olive oil in a pan and fry slices until golden brown.
Making the Salad
  1. In a bowl, combine chopped cherry tomatoes, finely chopped garlic, cilantro, parsley, olive oil, salt, and pepper. Toss gently to mix.
Serving
  1. Slice the beef into thick portions and plate it with the eggplant-tomato salad on the side.

Notes

For better flavors, consider marinating the beef with seasoning for a few hours or overnight. You can also add more veggies to the salad, such as bell peppers or cucumbers.
