  • 1/4 cup pesto sauce Can be replaced with hummus or a spread of choice.

Method

Assembling the Wraps
  1. Lay each tortilla flat on a large cutting board.
  2. Spread 1 tablespoon of pesto sauce evenly over each tortilla.
  3. Layer on the salami, prosciutto, shredded mozzarella, arugula, and roasted red peppers, leaving about an inch (2.5 cm) margin around the edges.
  4. Season with salt and pepper to taste.
  5. Starting from one side, tightly roll the tortilla until everything is enclosed. Tuck in the sides as you roll for a neat seal.
Cooking the Wraps
  1. If desired, heat a non-stick skillet over medium heat. Place the wraps seam side down on the skillet and cook for 2-3 minutes per side until golden and crispy.
  2. Slice each wrap in half and serve immediately.

Notes

For added flavor, grill the wraps on a panini press. Serve with a side of fresh fruit or a salad for a complete meal. If making ahead, wrap each completed wrap in parchment paper for easy storage.
