Preparation
- In a large mixing bowl, combine the flour, salt, vegetable oil, water, and a pinch of sugar. Mix until the dough is smooth and well combined. It should have a slightly sticky texture.
- Allow the dough to rest for 10-15 minutes while you prepare the filling. This resting period helps develop the gluten, making the flatbreads more pliable.
- Finely chop your chosen herbs (like dill or parsley) and mince the garlic. In another bowl, mix the cottage cheese, a pinch of salt, the chopped herbs, and minced garlic until well blended.
Cooking
- Heat a frying pan over medium heat and lightly grease it with vegetable oil to prevent sticking.
- Before you ladle each flatbread, stir the dough to incorporate any settled ingredients, then pour a scoop into the heated pan, spreading it gently to form a round shape.
- When the surface of the dough starts to set and small bubbles form, carefully flip it using a spatula.
- On one side of the flatbread, place a portion of the cottage cheese filling.
- Fold the other half of the dough over the filling, creating a semi-circle shape. Press the edges firmly to seal the filling inside.
- Cook until both sides are golden brown, checking periodically to prevent burning.
- Optionally, brush the warm flatbreads with melted butter before serving for extra flavor and richness.
- Repeat the process until you’ve made about 6-7 flatbreads. Serve them warm and enjoy!
Notes
If you want a richer flavor, consider mixing some grated cheese into the cottage cheese filling. For a bit of kick, add some finely chopped red chili or pepper flakes to the filling. Make sure the pan is not too hot; otherwise, the outside may brown too quickly while the inside remains uncooked. Enjoy fresh, or store leftovers in an airtight container in the refrigerator for up to 3 days.
