Ingredients

Nuts and Oats
  • 1/2 cup cashews Fresh for best flavor.
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/4 cup pine nuts
  • 1 cup rolled oats
  • a pinch salt
Wet Ingredients
  • 1/4 cup honey Can substitute with maple syrup for vegan option.
  • 1/2 cup peanut butter Can substitute with almond butter.

Method

Preparation
  1. Line your 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a bowl, combine the cashews, walnuts, almonds, pine nuts, rolled oats, and a pinch of salt. Stir to blend them well.
  3. In a saucepan over low heat, combine honey and peanut butter. Stir until just melted and well mixed; this should take about 2-3 minutes.
  4. Pour the warm honey mixture over the nut and oat mixture. Stir thoroughly to ensure all the dry ingredients are evenly coated.
  5. Transfer the mixture to the lined baking dish and press it down firmly into an even layer.
  6. Cover the dish with plastic wrap and refrigerate for at least 2 hours until firm.
  7. Once chilled, lift the bars out using the parchment paper and cut into squares or rectangles.

Notes

Chilling helps the bars set properly for a nice texture. Store in an airtight container for freshness.
