Ingredients

Dry Ingredients
  • 2/3 cup oat flour Can be homemade by grinding rolled oats.
  • 1/3 cup almond flour Can be substituted with other nut flours.
  • to taste cinnamon
  • 1/3 tsp baking powder
  • pinch salt
Wet Ingredients
  • 1/4 cup peanut butter Can be substituted with other nut or seed butters.
  • 2 tbsp honey Can be replaced with maple syrup or agave nectar.
  • 2-3 tbsp milk Any type of milk can be used.
Coating
  • sesame seeds For coating the cookie balls.

Method

Preparation
  1. Start by grinding rolled oats into flour using a blender or food processor. If you have oat flour ready, you can skip this step.
  2. In a mixing bowl, combine the oat flour, almond flour, cinnamon, baking powder, and salt. Mix well.
  3. If you’re making your own peanut butter, place roasted peanuts in a food processor and blend until smooth. If using store-bought, scoop it into your bowl.
  4. Add the peanut butter, honey, and milk to the dry ingredients. Stir until a dough forms; it should be slightly moist but not sticky. Adjust the liquid if necessary.
  5. Shape the dough into small balls about the size of a tablespoon, then roll them in sesame seeds to coat completely.
Baking
  1. Lightly grease a baking tray or line it with parchment paper. Place the cookie balls on the tray, and gently press each down to flatten slightly.
  2. Preheat your oven to 350°F (180°C) and bake the cookies for 8-10 minutes, until they turn golden brown and smell nutty.
  3. Once baked, allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them for up to two weeks. They warm up nicely in the microwave.
