Method
Preparation
- Start by pitting and roughly chopping the dates to make them easier to mix.
- In a food processor, combine the chopped dates, oatmeal, peanuts, raisins, sunflower seeds, pumpkin seeds, sesame seeds, and honey.
- Process the mixture until everything is finely chopped and well combined, achieving a sticky, dough-like consistency.
- Line a rectangular dish with parchment paper for easy removal later.
- Press down the mixture firmly and evenly in the dish, making sure it’s packed tightly.
Drizzling and Setting
- Melt the dark chocolate in the microwave or over a double boiler until smooth.
- Drizzle the melted chocolate over the mixture evenly.
- Place the dish in the refrigerator for at least 1-2 hours to set.
- Once set, use the parchment paper to lift the mixture out of the dish.
- Cut into bars or squares of your desired size.
Notes
These bars can be enjoyed as a quick snack or paired with tea or coffee. Customize by adding cinnamon or nutmeg. Store in an airtight container in the refrigerator for up to two weeks.
