Ingredients

Main Ingredients
  • 3 cups grated carrots
  • 2 pieces ripe bananas, mashed Use overripe bananas for best sweetness and moisture.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Additional spices like nutmeg or ginger can be added for warmth.
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup almond milk You can substitute with your preferred non-dairy milk.
Optional Ingredients
  • 1/2 cup chopped walnuts or pecans Add for crunch and flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease the cake pan lightly, or line it with parchment paper for easier removal.
  2. In a large mixing bowl, combine the grated carrots, mashed bananas, vanilla extract, cinnamon, baking soda, and salt. Mix well until everything is combined.
  3. Gradually add the almond milk, stirring to incorporate and achieve a smooth batter.
  4. If using nuts, fold them into the batter at this stage.
  5. Pour the batter into the prepared cake pan. Smooth the top with the back of a spatula.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Grating your carrots finely helps them blend better into the batter, ensuring a smoother texture. Enjoy this cake plain or with a simple glaze made from powdered sugar and almond milk.
