Preparation
- In a large, heavy-bottom pot, pour in the milk and slowly heat it over medium-low heat, stirring occasionally until the milk reaches about 190°F (88°C). This process can take about 20-30 minutes.
- Once the milk reaches the desired temperature, remove the pot from heat and let it cool for about 10 minutes.
- Sprinkle the salt into the warmed milk and gently stir to combine.
- Allow the milk to sit undisturbed for about 20-30 minutes until you see curds forming.
- Line a large colander with cheesecloth or a fine mesh strainer, then carefully pour the curds and whey into it to separate them.
- Rinse the curds under cold water to remove any residual whey and gently squeeze out excess moisture.
- Transfer the fresh cheese into an airtight container and store it in the refrigerator for up to a week.
Notes
Adjust the heating time slightly if you're in a hurry, but make sure the milk doesn’t boil. Experiment with flavors by adding fresh herbs, garlic, or spices at the salt stage. Store in an airtight container in the refrigerator.
