Ingredients

Nuts and Seeds
  • 100 grams Peanuts 3.5 oz
  • 50 grams Walnuts 1.8 oz
  • 50 grams Almonds 1.8 oz
  • 30 grams Pumpkin Seeds 1 oz
  • 40 grams Sunflower Seeds 1.4 oz
  • 1 tablespoon Sesame Seeds
  • 1 tablespoon Poppy Seeds
  • 1 tablespoon Flaxseed
Binders and Sweeteners
  • 1 tablespoon Natural Honey
  • 1 unit Egg White

Method

Preparation
  1. Preheat your oven to a moderate temperature of 180°C (350°F).
  2. In a food processor, combine the peanuts, walnuts, almonds, pumpkin seeds, sunflower seeds, sesame seeds, poppy seeds, and flaxseed. Pulse the mixture until it becomes coarse.
  3. Add the egg white and natural honey to your mixture. Blend again until everything is well combined, forming a sticky dough.
  4. Using your hands, shape the dough into cookie-sized portions and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until the cookies turn golden brown and are firm to the touch.
  2. Allow the cookies to cool on the baking sheet before enjoying.

Notes

For added flavor, consider adding a pinch of cinnamon or a drop of vanilla to the dough. Store these cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. To make it vegan, omit the egg white and use a flaxseed egg instead.
