Ingredients

Egg Mixture
  • 2 large large eggs Fresh eggs are key for the best flavor and texture.
  • 1 small shallot, finely chopped Can swap for a regular onion.
  • 1 piece spring onion, thinly sliced
  • ½ cup mushrooms, chopped Feel free to mix in other veggies.
  • Ground pepper, to taste
Additional Ingredients
  • 1 tablespoon butter Plus another for cooking.
  • 2 slices slices of your choice of bread Try different breads like sourdough or whole grain.
  • 2 slices cheese (cheddar, Swiss, or your favorite) Choose a cheese that melts well.

Method

Preparation
  1. Crack the eggs into a mixing bowl, add a pinch of salt, and whisk until well combined.
  2. Finely chop the shallot, spring onion, and mushrooms.
  3. Heat 1 tablespoon of butter in a skillet over medium heat until melted.
Cooking
  1. Add the chopped shallot, spring onion, and mushrooms to the pan and sauté for about 3-4 minutes until softened.
  2. Pour the whisked eggs over the sautéed vegetables and season with ground pepper. Cook until eggs are mostly set, stirring gently with a spatula, about 3-4 minutes.
  3. While the eggs finish cooking, toast the bread slices until golden brown.
  4. Place a slice of cheese on each piece of bread while it’s still warm.
  5. Spoon the cooked egg and vegetable mixture onto one slice of cheese-covered bread.
  6. Close the sandwich with the other cheese-covered slice, cheese side down.
  7. In the same skillet, add another piece of butter and grill the sandwich for about 2-3 minutes on each side until the bread is crispy and the cheese is melted.
  8. Serve hot, cut in half if desired, and enjoy your delicious Egg and Cheese Breakfast Sandwich!

Notes

Keep the heat at medium to avoid burning. Add a pinch of red pepper flakes for heat. Experiment with herbs like chives or parsley.
