Ingredients

For the pie
  • 3 medium medium apples, peeled, cored, and sliced Using a mix of tart and sweet apples, like Granny Smith and Honeycrisp, enhances flavor.
  • 3 large large eggs
  • 180 ml milk (3/4 cup)
  • 150 g granulated sugar (3/4 cup)
  • 1 pinch salt
  • 300 g all-purpose flour (2 1/2 cups)
  • 80 g melted butter (5 tablespoons)
  • 10 g baking powder (2 teaspoons)
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 lemon zest and juice
  • Vegetable oil (for greasing the pan)

Method

Preparation
  1. Preheat your oven to 180°C (356°F) and lightly grease the baking mold with vegetable oil.
  2. Peel, core, and slice the apples. Toss them with a little lemon juice in a bowl to keep them from browning.
  3. In a separate mixing bowl, whisk together the eggs, sugar, milk, melted butter, vanilla extract, lemon zest, and a pinch of salt until smooth.
  4. Sift in the flour, baking powder, and cinnamon, and mix until just combined—be careful not to overmix, or the cake could become dense.
  5. Gently fold the sliced apples into the batter, ensuring they are evenly distributed.
  6. Pour the batter into the greased baking mold, spreading it evenly with a spatula.
Baking
  1. Bake for 40-45 minutes until the pie is golden and a toothpick inserted in the center comes out clean.
  2. Once baked, let it cool slightly in the pan before slicing.
Serving
  1. Serve warm, and enjoy the delightful combination of flavors and textures!

Notes

For a richer flavor, consider adding a bit more cinnamon or a dash of nutmeg. If the top browns too quickly, cover it with aluminum foil for the remaining baking time. Allowing the pie to sit for a few minutes after baking makes it easier to slice.
