Preparation
- In a medium saucepan, heat milk over medium-low heat until it’s steaming but not boiling, watching for small bubbles around the edges.
- In a mixing bowl, whisk the eggs and sugar together until the mixture is smooth and light in color, about 2 minutes.
- Gradually pour the warm milk into the egg mixture, whisking continuously to temper the eggs and prevent them from scrambling.
Cooking
- Return the mixture to the saucepan over low heat and stir constantly for about 5-7 minutes until the custard thickens enough to coat the back of a spoon, but do not let it boil.
- For an extra smooth custard, strain the mixture through a fine-mesh sieve into a bowl.
Cooling & Serving
- Let the custard cool, then transfer it to serving dishes. Cover with plastic wrap directly on the surface to prevent a film from forming.
- Refrigerate for at least an hour before serving.
Notes
Whisk the eggs well for a smooth texture. Stir constantly to prevent scorching, and if the custard doesn't thicken, ensure you're not cooking it too quickly. Consider adding vanilla or nutmeg for extra flavor.
