Ingredients

Main Ingredients
  • 6 pieces croissants, torn into pieces (about 300 g) Using good quality croissants is essential for the best flavor and texture.
  • 2 cups fresh cherries, pitted and halved (or frozen, thawed) Fresh cherries are wonderful, but frozen ones work just as well; make sure to drain them well if you use frozen.
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup ground almonds (almond flour) Don't skip the ground almonds; they add a lovely depth of flavor and improve texture.
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt Skipping the salt can dull the flavors; it enhances the overall taste.
  • 1 cup powdered sugar, for dusting (optional) Dust on top before serving for a beautiful finish.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the torn croissant pieces and cherry halves. Toss to distribute the cherries evenly.
  3. In another bowl, whisk together the eggs, heavy cream, granulated sugar, ground almonds, vanilla extract, and salt until well combined.
  4. Pour the egg mixture over the croissant and cherry mixture. Gently fold everything together with a rubber spatula until the croissants are soaked but not falling apart.
  5. Pour the mixture into the prepared baking pan, spreading it out evenly.
Baking
  1. Bake in the preheated oven for 35-40 minutes or until the edges are golden brown and the center is set—a toothpick should come out clean.
  2. Allow to cool for 10 minutes in the pan, then carefully remove (if using parchment) and transfer to a wire rack.
  3. Once cooled slightly, dust with powdered sugar if desired, then slice into wedges to serve.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Allow it to come to room temperature before serving again for the best taste and texture.
