Ingredients

Main Ingredients
  • 2 medium zucchinis Fresh zucchinis with a firm texture are best.
  • 1 cup all-purpose flour Can substitute with a gluten-free blend.
  • 2 large eggs
  • 1 cup milk For a dairy-free option, use a dairy-free milk alternative.
  • 1/2 teaspoon salt Don't skip for flavor.
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil Plus extra for frying.
Optional Fillings
  • 1 cup grated cheese For a savory option.
  • 1 cup sautéed vegetables Such as mushrooms and spinach.
  • 1 cup cooked meat Enhance protein content.

Method

Preparation
  1. Grate the zucchinis using a box grater or food processor. If they seem watery, place them in a clean towel and squeeze out excess moisture.
  2. In a mixing bowl, combine the flour, eggs, milk, salt, and pepper. Whisk until smooth.
  3. Fold in the grated zucchini until well incorporated.
Cooking
  1. Heat a frying pan over medium heat and add a small amount of olive oil, swirling to coat.
  2. Pour a ladleful of the zucchini batter into the pan, tilting to spread evenly into a thin layer.
  3. Cook for about 2-3 minutes or until the edges start to lift and the bottom is golden brown.
  4. Carefully flip the crepe and cook for an additional 1-2 minutes on the other side. Transfer to a plate and keep warm.
  5. Repeat with the remaining batter, adding more oil to the pan as needed.
Serving
  1. Fill each crepe with your choice of fillings, roll them up, and serve.

Notes

For extra flavor, add herbs like basil or parsley to the batter. Ensure the pan is adequately oiled and preheated to avoid sticking. Store leftover crepes in an airtight container for up to 3 days.
